Rosca de Reyes

Ingredients
Dry Ingredients:
- 4 cups of all-purpose flour
- ⅔ cup of white sugar
- 2 packages of dry yeast
- 1 pinch of salt
Other:
- 3 eggs
- 3 eggs, with egg yolk separated
- 1 tbsp of warm water
- 1 orange, zested
- 1 lime, zested
- ½ cup butter, softened
- 1 tbsp of butter
For Topping:
- ½ cup of white sugar
- ¼ cup of butter
- ¼ cup of all-purpose flour
- 20 candied citrus peels
Cooking Materials:

Instructions
Start by mixing the 4 cups of flour, eggs, egg yolks, 2/3 cup of white sugar, water, dry yeast, orange zest, lime zest, and salt. Mix well together and add 1/2 cup plus 1 tbsp of butter gradually until it is well mixed together. After dough is formed, form it into a ball. Then place it in a large glass bowl and cover it with saran wrap. Let rest for about 45 minutes to let dough rise. After dough is ready, place it in a flat surface and roll into a long cylinder shape. Then join ends to make it look like a “0” (zero) shape. Get baking sheet and apply small amount of softened butter, then place the “0” shape on a flat surface, cover it with saran wrap and let rest for an hour. While you wait, preheat your oven to 400°F. Whisk the 3 resting eggs whites in a small bowl. Brush egg whites evenly over dough. Mix 1/2 cup of white sugar and 1/4 cup butter in a small bowl with your fingers to form a paste. Add enough flour until you get a thick consistency. Divide dough into small sizes balls, make about 5. Place each ball on parchment paper. Press with the bottom of a 1-cup measuring cup to make a circle about 1/8 inch thick. Place circles around the dough and place toppings of your choice on top of the dough. Place dough inside oven until golden brown, for about 20 minutes.
