Tamales

Tamales

All of the following ingredients can be found in our stores.

Ingredients

    • 1 package dried corn husks
    • toppings of choice (guacamole, enchilada sauce, hot sauce, salsa, cilantro)
    • 3 cups of your filling of choice (cheese, chicken, beans etc)
    • 6 cups masa de harina
    • 2 1/2 teaspoons of salt
    • 2 teaspoons of ground cumin
    • 1 teaspoon of chili powder
    • 1 teaspoon of baking powder
    • 6 cups of chicken stock
    • 3/4 cup of vegetable oil
    • 1 cup of salsa

Instructions

Submerge the corn husks in a bowl of warm water for 30 minutes. Place another bowl on top so that the corn husks so that they stay under water.

While the corn husks are soaking, it’s time to make the masa. Mix together the baking powder. chili powder, cumin and masa de harina. Add oil and mix it while gradually adding the chicken stock. Once all of it is added, start mixing it in medium-high speed for about 7 minutes until it is fluffy and light.

Now it’s time to assemble the tamales. Get your filling and salsa and mix them together. Place 1/4 cup of your masa in corn husk. Spread it enough so that you can line 1-2 tablespoons of your filling. Wrap the corn husk around.

Ingredients

Dry Ingredients:

  • 4 cups of all-purpose flour
  • ⅔ cup of white sugar
  • 2 packages of dry yeast
  • 1 pinch of salt

Other:

  • 3 eggs
  • 3 eggs, with egg yolk separated
  • 1 tbsp of warm water
  • 1 orange, zested
  • 1 lime, zested
  • ½ cup butter, softened
  • 1 tbsp of butter

For Topping:

  • ½ cup of white sugar
  • ¼ cup of butter
  • ¼ cup of all-purpose flour
  • 20 candied citrus peels

Cooking Materials:

Instructions

Start by mixing the 4 cups of flour, eggs, egg yolks, 2/3 cup of white sugar, water, dry yeast, orange zest, lime zest, and salt. Mix well together and add 1/2 cup plus 1 tbsp of butter gradually until it is well mixed together. After dough is formed, form it into a ball. Then place it in a large glass bowl and cover it with saran wrap. Let rest for about 45 minutes to let dough rise. After dough is ready, place it in a flat surface and roll into a long cylinder shape. Then join ends to make it look like a “0” (zero) shape. Get baking sheet and apply small amount of softened butter, then place the “0” shape on a flat surface, cover it with saran wrap and let rest for an hour. While you wait, preheat your oven to 400°F. Whisk the 3 resting eggs whites in a small bowl. Brush egg whites evenly over dough. Mix 1/2 cup of white sugar and 1/4 cup butter in a small bowl with your fingers to form a paste. Add enough flour until you get a thick consistency. Divide dough into small sizes balls, make about 5. Place each ball on parchment paper. Press with the bottom of a 1-cup measuring cup to make a circle about 1/8 inch thick. Place circles around the dough and place toppings of your choice on top of the dough. Place dough inside oven until golden brown, for about 20 minutes.

  • Turkey
  • Salt and Pepper
  • carrots
  • apples
  • chopped onions
  • herbs
  • butter

Instructions

Take out the giblets off your turkey. Pat it dry and then leave it in room temperature for 30 minutes. Preheat your oven on 325 degrees. Season the turkey with salt and pepper. Fill the turkey with carrots, apples, chopped onions and herbs. Then tie the legs together. Place it in a roasting pan, breast-side up, and brush it with melted butter. Cover it with foil and roast it in the oven for 2 hours if its a 10-12 pond turkey. Add an extra 15 minutes per pound if it’s a larger turkey. Take the turkey out, brush it with more melted butter and put it back in the oven at 425 degrees. Roast it until the thigh meat shows 165 degrees, which should be in about an hour. And we’re done!

Sugar Cookies

Ingredients

  • 1 egg
  • 1 tbsp of milk
  • 1/4 tsp of salt
  • 1 3/4 cups of flour
  • 3/4 tsp of baking powder
  • 2 tsp of cinnamon powder
  • 3/4 cup of sugar
  • 1/2 cup of all vegetable shortening
  • 1 roller
  • 1 medium bowl
  • Cooking Sheet
  • 1 Knife
  • 1/2 cup of sugar
  • 2 tsp of cinnamon powder

Instructions

Mix dry ingredients except for the sugar. Beat the vegetable shortening until it looks soft and frothy. Slowly add sugar, the egg and milk. Keep mixing until there is no more air bubbles. Get your dough out, add a bit of flour to surface and your hands to prevent dough from sticking. Start kneading dough until you get a firm texture and everything is well mixed. Place dough on a flat surface and start rolling it back and forth until it is about 10 inches long. With a knife cut dough into fourths, then cut each fourth into 5 slices. In a separate container mix a 1/2 cup of sugar and 2 tsp of cinnamon powder. Cover the 5 slices with this mixture of cinnamon and sugar. Then place them on a cookie sheet that completely covers your pan.

Preheat your oven to 350°F and bake for about 10 minutes.
